Summer seemed to fly by so quickly and before you know it our kiddos are back in school. As moms we hope they have great teachers, remember where their classes are (especially for the Jr High and High schoolers), connect with their friends + make new ones and overall enjoy learning as much as we did! One of our favorite traditions is having a treat for them when they come home from that first day of school…hopefully to make the transition from summer to school a little easier. This year (with the help our little Jedi) we made warm, sweet tasting chocolate chip cookies. Jedi loved making them just as much as we did!!
We LOVE the Chocolate Chip recipe from Namaste Foods (the one and only recipe we use when making chocolate chip cookies). We wanted to modify it slightly and add their amazing Organic Garbanzo Bean Flour to see what that was like in taste and texture. Years ago when we started modifying our recipes to be gluten-free, our kids would never eat recipes with Garbanzo Bean Flour. They didn’t like the taste at all. We liked using Garbanzo Bean Flour because of the health value. Garbanzo Bean Flour is high in dietary fiber and a wonderful source of protein and iron.
And here was our findings…
Not one of the kids (or adults) noticed, complained, or didn’t eat them.
In fact, they devoured the entire batch! Yes!!!
We actually liked the texture a little more too…so maybe our new secret flour will be garbanzo flour! Thanks Namaste Foods for making amazing products to help us in the kitchen!
Below is the recipe we used…
Gluten-Free Chocolate Chip Cookies:
1 cup Namaste Perfect Flour Blend
1 cup Brown Rice Flour
1/2 cup Organic Garbanzo Bean Flour
1/2 tsp salt
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla extract
1 1/2 cups chocolate chips
In a small mixing bowl, combine the perfect flour blend+brown rice flour+garbanzo bean flour+salt. Set aside. In a large mixer, beat the butter till it’s smooth. Then add the sugar+brown sugar+vanilla. Add 1 egg at a time, till the batter is creamy. Slowly add the flour mixture until it forms a smooth dough. Stir in the chocolate chips. On an ungreased cookie sheet, add small spoonfuls of batter. Bake at 375° for 9 minutes. Allow cookie to cool for 1-2 minutes before transferring them to wire rack.
